Monday’s Meal Plan for July 4 is a tough one for me.
I haven’t shared much with you about my health recently because I’ve been coming to terms with it myself (plus I never want to use this blog as a platform to babble!). I’ve struggled with Chronic Fatigue Syndrome and Thyroid issues, and recently have been feeling off again. So I went to an ENT to get my levels tested.
After blood tests and an ultrasound, he discovered that not only were my TSH and Vitamin D levels WAY low, but they discovered a large nodule on the left side of my thyroid.
I just underwent a biopsy on Thursday, so I don’t have the results yet, but regardless, I know I’m going to have to make some life changes.
That being said, it looks like I’m going to go back to a gluten-free diet…at least for awhile to see if it makes a difference. The good news is that e-Mealz has a gluten-free meal plan!
