IN MY LIFE
* It’s day 2 of our fast and it’s amazing what a difference I feel when I eat closer to nature, so to speak. I made a vegan Mexican 7 layer dip and replicated Chipotle’s sofritas recipe last night and was pretty impressed, if I do say so myself. I also made a healthy apple crisp for dessert and sure, while some whip cream or ice cream would have dialed it up a notch, it was quite delicious.
I have a ton of meetings today in addition to preparing for a TV segment on Friday. I also think my husband and I are going to a parenting seminar tonight, which shows you how much we love our kids because I really want to plant myself in front of the TV for Game 7 of the World Series and he wants to watch the CMA awards 😉
