In an effort to improve our budget and our health, I’ve been cutting back on meat in our dinner dishes.
Tonight I cooked a vegetable feta tart, cucumber-tomato salad, sauteed potatoes with onions and french bread. I always put a little bit of everything I make on the kids plates for them to try, even if they don’t eat it all.
At the end of the meal, Kariss was carrying her plate to the kitchen when she stopped and turned back to look at me and say, “Thanks for dinner mommy…Some of it was delicous!”
Hey, I’ll take what I can get these days!
