Shaking Beef Recipe with Billy Dec (Sunda New Asian)

Billy Dec showed up to help us celebrate AAPI Heritage Month. He brought Executive Chef Mike Morales from Sunda New Asian to demonstrate how to make Shaking Beef.

Billy Dec Shaking Beef Recipe

“Shaking Beef” is a recipe that features wok-seared beef filet, greens and a lime-pepper dipping sauce.

May is Asian American and Pacific Islander Heritage (AAPI) month. In addition to the Shaking Beef, Sunda New Asian restaurant is featuring several special recipes in honor of AAPI Heritage Month:

  • boo-dah’s style grilled ahi tuna and pork  – chili vinegar, mango, sweet onions
  • golden child sushi – escolar, mango, avocado, tempura crumbs, mango crème 
  • malay style chilean seabass – coriander, lemongrass, miso, chilis, curried cauliflower puree

While I couldn’t believe how easy it was to make Shaking Beef, it’s even better when you eat it in person. Speaking of going to Sunda, I highly recommend you check out their Sunday Brunch. They even have an all-you-can-eat buffet for Mother’s Day.

Sunda New Asian Shaking Beef Recipe

INGREDIENTS

  • 8 oz Filet 
  • 2 tsp black pepper, coarse ground
  • 2 fl. oz. canola oil
  • 1 fl. oz low sodium soy
  • 3 oz watercress
  • 3 pc red chili
  • 2 fl. oz. pepper lime sauce 

INSTRUCTIONS

  • Cut filet into large dice (8-10 pcs)
  • In mixing bowl, massage beef with black pepper
  • Heat oil in wok, once wok is hot, sear beef until desired temp
  • Once seared, deglaze with low sodium soy and set aside
  • In same wok, toss in watercress to sweat (5 seconds) 

PLATING

  • Place watercress in a neat pile in the middle of the plate
  • Place beef on top of watercress
  • Garnish with red chilis
  • Place a ramekin of pepper lime sauce at the corner of the plate

PEPPER LIME SAUCE

  • 2 tbsp black pepper, ground
  • 2 tbsp minced garlic
  • ¼ cup fish sauce
  • 4 cups lime juice
  • ¾ cup brown sugar

INSTRUCTIONS: mix all of the ingredients together and place into a sauce pan, heat until sugar is dissolved, cool and store.
