Meal Plan Monday: 4/12

I have to admit: I’m not feeling very original this week when it comes to my meal plan.

The fact that my husband seems to be craving more of the Southern foods he loves while I’m trying to take our meals to a healthier level has proved difficult for me this week.

So here it is – take it for what it’s worth. I’m hoping to get more creative next week, but hopefully I can draw some inspiration from you guys!

Monday Cereal & Kiwi Chicken & Cheese roll ups Cracker Crusted Chicken, cheesy spinach rice
Tuesday Fruit Oatmeal Greek Salad Scrambled Hamburgers, oven baked fries
Wednesday Cereal & pineapple Grilled Cheese BBQ Chicken Pizza
Thursday Oatmeal with raisins & honey Chicken Tortilla Soup Baked Potatoes
Friday Egg Sandwich Quesadillas Honey Chicken over rice
Saturday Mickey waffles Cheese & Cucumber Sandwiches Lemon Butter Tilapia
Sunday Cereal leftovers Easy Pot Roast with mashed potatoes & carrots

I could not get over how much I liked it, Lynn! My tip, go heavy on the garlic in the cracker crust – there’s something magical when garlic and butter combine 😉
