Without fail, wherever I go, when I bring this salad, I’m asked for the recipe…so I’ve just started traveling with it in hand! I got the recipe from my mother-in-law, Anita, but I believe it originally came from her friend, Becky Mydock. You’ll be thanking both those ladies for this is fresh, easy, and delicious dish.

We often omit the mandarin oranges (and I believe the original recipe calls for slivers of celery too), but we like to keep it simple with just the strawberries, almonds and Chinese noodles.

Spinach Salad with Strawberries Recipe

1 -10 oz bag of spinach
1 qt of fresh strawberries, sliced
1- 15oz can mandarin oranges (drained)
1 can Chinese noodles
1 c toasted almonds (bake until brown at 350 degrees)

Dressing:

2/3 c oil
½ c sugar
1 T poppy seeds
¼ c vinegar

Mix, pour & toss with salad just before serving
