monday-meal-planMonday’s Meal Plan comin’ at ya! Has everyone recovered from their Fourth of July celebrations?

One of my favorite lines (paraphrased) from comedian Jim Gaffigan is, “I don’t normally eat at hot dog, bratwurst and steak at the same meal, but it is the Fourth of July, so ok!” Why do feel like holidays give us a license to eat whatever we want?  We didn’t get the chance to grill out yesterday, but we did enjoy one of the greatest fireworks display I’ve ever seen at the riverfront in downtown Nashville!

We’re still drinking our Cinch shakes for breakfast and lunch (most days!) and feeling really great, so I wanted to still share our dinner plans for the week.  If you want some ideas for breakfast & lunch, you can check out my meal plan archives. We’ve really been enjoying exploring with our Farmer’s Market finds each week. Our farmer friend suggested a “Paw Paw” squash, and told us to stuff it with ground beef, rice and Parmesean cheese, then bake it for 30-45 minutes. Kariss thinks “it’s the best vegetable she’s ever eaten” and she DOES NOT like zucchini or squash.

I’ve also finally written out my gyoza recipe for you (please, hold the applause until the end) and you can watch my gyoza video for technique too (or just to see the chaos in my house around dinnertime!).
